I was doing some googling on trichinosis and discovered that according to FDA regulations, the larvae are killed instantly at 144F.

So despite what people have been taught, there’s no need to cook pork to the consistency of shoe leather.

    These days lots of restaurants cook pork even less than that. It turns out that trichinosis is almost unheard of in pork these days because the pigs are all given pig feed instead of garbage like in the good old days. The most common means of trichinosis transmission currently is bear meat.
